• Run the chicken thighs through a grinder. If you work with minced turkey or poultry, just skip this step.
• Heat oil in a skillet that is also ovenproof and cook the ground chicken on one side for 3 minutes, then flip and cook for an additional 2 minutes.

• In the same skillet, sauté the onion, garlic, finely chopped green tomatoes, and eggplant. Cook them on low heat for around 5-6 minutes.
